Parmesan Crusted Grilled Cheese
The same grilled cheese, but with a shatteringly crispy parmesan crust on the outside.
This is the same grilled cheese as the classic version, with one extra step that changes everything. Grated parmesan goes directly into the hot pan before the sandwich does. The cheese melts and crisps against the surface of the pan, and the bread presses right into it, picking up a thin, golden, almost lace-like crust as it cooks. It sounds like a trick but it is genuinely just parmesan doing what parmesan does when it hits direct heat. Do this on both sides for a sandwich that is crusted all the way around.
Prep: 5 min • Cook: 8 min • Serves: 1
Ingredients
- 2 slices Bread
- 2 Tbl Butter
- 2 slices Cheddar Cheese
- 0.33 cup Parmesan, finely grated
Instructions
- Butter one side of each bread slice. Place cheddar between the unbuttered sides.
- Heat a pan over medium-low heat. Sprinkle half the parmesan directly into the dry pan in roughly the shape of the sandwich.
- Place the sandwich on top of the parmesan, buttered side down, and press gently. Cook for 3-4 minutes until the parmesan is melted and deeply golden.
- Sprinkle the remaining parmesan into the pan, flip the sandwich onto it, and cook another 3-4 minutes until both sides are crusted and golden.
- Slice and serve immediately while the crust is still crisp.
