One Pot Tomato Basil Soup
Smooth, bright tomato soup with fresh basil - simple enough for a Tuesday, good enough for a sick day.
Tomato soup does not need to be complicated to be good. Canned tomatoes are already cooked down and concentrated, which means most of the work is already done before you even start. Simmer them with broth and basil, blend until smooth, and that is genuinely the whole recipe. A blender or immersion blender does the work here - either is fine, just be careful blending anything hot.
