Strawberry Mug Muffin
Fresh strawberries and vanilla in one mug - bright, soft, and genuinely excellent for something that took 4 minutes.
Strawberry muffins are underrepresented in the mug muffin space and that's a problem worth fixing. The trick is cutting the strawberries small - roughly the size of a blueberry - so they distribute evenly through the batter and cook properly in the microwave's short window. A pinch of vanilla makes the strawberry flavor come forward rather than fade. This one is gentler than the other variations, which makes it either the right call or the wrong call depending entirely on what you're in the mood for. It tastes clean and fresh in a way that most 90-second microwave food has no business tasting.
Prep: 4 min • Cook: 2 min • Serves: 1
Ingredients
- 3 Tbl All-Purpose Flour
- 2 Tbl Sugar
- 0.25 tsp Baking Powder
- 1 pinch Salt
- 1 Egg
- 2 Tbl Milk
- 1 Tbl Butter, melted
- 0.5 tsp Vanilla Extract
- 3 Tbl Fresh Strawberries, finely diced
Instructions
- Dice strawberries small - roughly blueberry-sized pieces work best.
- Mix flour, sugar, baking powder, and salt in the mug.
- Add egg, milk, melted butter, and vanilla. Stir until just combined.
- Fold in diced strawberries.
- Microwave on high for 75-90 seconds until risen and set.
- Cool for one minute. The strawberry pieces will have softened and released a little juice into the batter. This is a good thing.
