Apple Spice Mug Muffin
Apple, cinnamon, nutmeg, and brown sugar in one mug - tastes like autumn in under 5 minutes.
This one smells so good coming out of the microwave that it's genuinely disorienting. The apple goes in small diced pieces rather than grated - grated apple disappears into the batter completely while small pieces stay intact and create little soft pockets throughout the muffin. The spice combination is essentially apple pie filling compressed into a mug: cinnamon does the heavy lifting, nutmeg adds warmth, brown sugar adds depth. If you have a spare five minutes and a single apple, you have this. It's the mug muffin for people who want their kitchen to smell like a bakery before they've finished their first cup of coffee.
