Peanut Butter Nutella Mug Muffin
Peanut butter batter, Nutella swirled through the middle - technically breakfast, realistically dessert.
The classification of this mug muffin as breakfast is technically accurate and morally flexible. Peanut butter goes into the batter which means protein and fat, so it's breakfast. Nutella gets swirled through the middle and melts into molten pockets during the microwave, so it's also dessert. The beauty is that the peanut butter in the batter is substantial enough that the whole thing holds together as an actual muffin rather than just a vehicle for Nutella - although nobody would blame you for leaning into the Nutella. Add an extra tablespoon (or two) if you're having one of those days.
Prep: 3 min • Cook: 2 min • Serves: 1
Ingredients
- 3 Tbl All-Purpose Flour
- 1 Tbl Sugar
- 0.25 tsp Baking Powder
- 1 pinch Salt
- 1 Egg
- 2 Tbl Milk
- 2 Tbl Peanut Butter
- 0.5 tsp Vanilla Extract
- 1 Tbl Nutella (for the swirl)
Instructions
- Mix flour, sugar, baking powder, and salt in the mug.
- Add egg, milk, peanut butter, and vanilla. Stir until smooth - peanut butter takes a few extra stirs.
- Drop Nutella in spoonfuls on top and swirl through the batter with a toothpick. Don't fully mix it in.
- Microwave on high for 75-90 seconds until set around the edges but still slightly soft in the center.
- Cool for one minute. The Nutella pockets will still be warm and slightly molten. That's the goal.
