Pesto Chicken Salad
Chicken salad swapped to pesto instead of plain mayo - brighter, herby, and works hot or cold.
Start with the same base as the classic - shredded chicken, mayo, celery - and stir in basil pesto. The basil and pine nut flavor coats every piece of chicken and turns a plain chicken salad into something with a lot more going on. Use leftover chicken from a roast and this comes together in five minutes.
Prep: 10 min • Serves: 4
Ingredients
- 3 cups Cooked Chicken, shredded (leftover roast chicken works perfectly)
- 2 Tbl Mayonnaise
- 2 Celery Stalks, finely diced
- 3 Tbl Basil Pesto (store-bought is fine)
- Salt and Pepper to taste
Instructions
- Combine shredded chicken and celery in a bowl.
- Add the mayonnaise and pesto. Stir until evenly coated.
- Season with salt and pepper - pesto is already salty so taste before adding more.
- Serve in a sandwich, on crackers, over greens, or directly from the bowl. All valid.
