Crispy Oven Roasted Sweet Potatoes
Caramelized at the edges, tender in the middle - sweet potatoes done the right way.
Sweet potatoes have a tendency to go soft and mushy if you are not careful, which is the opposite of what you want. The fix is the same logic that works for regular potatoes - high heat and enough room on the pan for the natural sugars to caramelize instead of just steam away. Give them a single layer and resist the urge to stir too often. What comes out is deeply browned on the outside with a soft, almost custardy center.
Prep: 10 min • Cook: 30 min • Serves: 4
Ingredients
- 2 lbs Sweet Potatoes, cut into 1-inch pieces
- 3 Tbl Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat oven to 425F. High heat caramelizes the natural sugars instead of letting them steam away.
- Toss the sweet potato pieces with olive oil, salt, and pepper directly on a baking sheet.
- Spread in a single layer, leaving space between pieces so they brown instead of soften.
- Roast for 25-30 minutes, flipping once halfway, until caramelized at the edges and tender in the center. Serve right away.
