Crispy Oven Roasted Potatoes
Deeply golden outside, soft all the way through - the only roast potato recipe you need.
Roasted potatoes are one of those sides that should be effortless but somehow gets overcomplicated. It does not need to be. High heat, a single layer, and the patience to let them sit undisturbed for the first stretch is the entire secret. The outside turns deeply golden and crisp while the inside stays soft.
Prep: 10 min • Cook: 35 min • Serves: 4
Ingredients
- 2 lbs Potatoes, cut into 1-inch pieces
- 3 Tbl Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat oven to 425F. The high heat is what makes this work - do not go lower.
- Toss the potato pieces with olive oil, salt, and pepper directly on a baking sheet.
- Spread in a single layer. If the pieces are touching too much they will steam instead of roast.
- Roast for 25-30 minutes, flipping once halfway, until golden and crispy on the outside and tender inside. Serve right away.
