Crispy Oven Roasted Broccoli
Broccoli that actually tastes good
Overcooked, gray, steamed broccoli is why people think they do not like broccoli. Roasted broccoli at high heat is an entirely different vegetable. The florets get crispy and slightly charred at the edges while the stems stay tender. This is genuinely the side dish people eat standing at the counter before it reaches the table. High heat is the whole game - 425F minimum. Lower and it steams instead of roasts and you end up with the sad gray version. Keep It Simply Silly version uses minimal ingredients - just broccoli, olive oil, salt, and pepper.
Prep: 5 min • Cook: 20 min • Serves: 4
Ingredients
- 2 large head Broccoli, cut into florets
- 3 Tbl Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat oven to 425F. The high heat is what makes this work - do not go lower.
- Toss broccoli florets with olive oil, salt, and pepper directly on a baking sheet.
- Spread in a single layer. If the florets are touching too much they will steam instead of roast.
- Roast for 18-22 minutes until the edges are crispy and slightly charred. Serve right away.
