Banana Bread Mug Muffin
One very ripe banana, one mug, one microwave, five minutes. Banana bread for one, right now.
Grab a spoon, a mug, and your most dramatic banana - the one that's been in your fruit bowl since Monday. Last Monday. That banana is perfect for this. Overripe bananas are sweeter, softer, and infinitely better in baking than the pristine yellow ones you actually wanted to eat. This mug muffin takes 90 seconds in the microwave and tastes like you made proper banana bread, except you did it in a mug before your coffee finished brewing. Add chocolate chips or walnuts if you're feeling ambitious. Or don't. It's already great.
Prep: 3 min • Cook: 2 min • Serves: 1
Ingredients
- 1 Very Ripe Banana (the browner the better)
- 1 Tbl Butter, melted (or oil)
- 1 Egg Yolk
- 1 Tbl Brown Sugar
- 0.25 tsp Vanilla Extract
- 3 Tbl All-Purpose Flour
- 0.25 tsp Baking Powder
- 1 pinch Salt
- 2 Tbl Chocolate Chips or Walnuts (optional, but come on)
Instructions
- Grab a microwave-safe mug. Bonus points if it has a motivational quote or a cat on it.
- Mash the banana directly in the mug until mostly smooth. You'll feel slightly powerful.
- Stir in melted butter, egg yolk, brown sugar, and vanilla until combined.
- Sprinkle in flour, baking powder, and salt. Stir until everything is friends. Fold in chocolate chips or walnuts if using.
- Microwave on high for 60-90 seconds depending on your microwave's mood. It should rise like it's doing a very polite cheer.
- Cool for a minute unless you enjoy burning the roof of your mouth. Eat straight from the mug with a spoon. You made banana bread in under 5 minutes. You're basically a genius.
